Deano's Springwater Smoked Trout is a family-run trout farm set on 300 acres in the Northern Tablelands of NSW, just off the New England Highway at Black Mountain. Come to catch your own trout, camp beside the dam, tour the farm or stock your own waterway from our hatchery — then take home the smoked trout, whole trout and dip that have won medals at the Sydney Royal Fine Food Show.

Our story

Started in 1999 as a hobby of pure passion.

Set amongst the rolling hills of the Northern Tablelands, our farm spans 300 acres of pristine country, with the fish farm itself running across roughly 10 hectares and eight spring-water growing ponds.

We raise rainbow trout — alongside brown trout and Atlantic salmon — entirely in spring water. Because the ponds are open to the elements, our fish eat a natural, healthy diet of insects and nutrients, supplemented with organic pellets. It's that water and that diet you can taste in every fillet.

Planning a visit or after the trout? Here's the quick run-down.

Where is Deano's Springwater Smoked Trout?

We're at 643 "Ardrossan", Black Mountain Rd, Black Mountain NSW 2365 — in the New England Tablelands, just off the New England Highway between Guyra and Glen Innes, and a short drive north of Armidale.

Are dogs allowed?

Yes — dogs are welcome at the campground. We just ask that they're kept under control and cleaned up after, so everyone (and every other dog) has a good time.

Do I need to book to visit, fish or camp?

Camping is best booked ahead so we can hold your site. Fishing and farm-gate visits — you can simply drop in. Farm tours run Tuesdays and Thursdays at 10am; please book ahead, and larger groups can arrange a custom tour by appointment.

How much does fishing cost?

Use of the facilities & BBQ area is $10 per person. Entry and fishing is $20 per adult and $10 for kids under 16. Add rod hire for $25 per adult / $15 per child. Catch & keep trout is $30 per kilo, and we'll clean and cryovac your catch for the BBQ or the trip home.

How much is camping?

Non-powered sites are $30 per night and powered sites are $35 per night. Tents, camper trailers, caravans, RVs and big rigs are all welcome. All sites are to be left clean and tidy.

Can I buy the smoked trout without visiting the farm?

Absolutely. Our smoked trout, whole trout and dip are available at the farm gate, at selected stockists across NSW and Brisbane, and wholesale for cafés, delis, restaurants and butchers. Get in touch and we'll point you to your nearest stockist.

Do you sell trout for stocking dams?

Yes — our hatchery raises Rainbow Trout (Oncorhynchus mykiss) fingerlings for private dams and waterways. We hatch a limited number each year, so orders are essential. Contact us for the current price list and availability.

What flavours do the fillets come in?

Traditional (preservative-free, great for cooking or eating as is), Bush Lemon (lemon myrtle, hazelnut, coriander, lemongrass, sesame, pepper, chilli), Sumac & Dill, Garlic with cracked pepper and hazelnut, and Cracked Pepper with sea salt.
